Commodity Knowledge
My target for this section, is to post pictures of every types of food fish eaten in this country. As I come across them, they will be added. In the meantime, I've begun with pen pictures of each fish. The video below give an ample overview of three main types of fish: Round White; Round Oily and Flat (always white)
ROUND WHITE FISH:
Cod - is a round white fish found in the colder parts of the North Atlantic ocean. Has a pure white flesh with large firm flakes.

Haddock- is another round white fish found in the colder parts of the North Atlantic ocean. Has a pure white flesh with a slightly sweet taste.

Hake - is another firmed white-fleshed sea fish from European waters. Often found farmed.

ROUND OILY FISH
Mackeral - is a round oily fish found around the coasts of Great Britain. It has a tasty flesh, rich in essential oils.
Like many other oily fish, it is often tinned.

Salmon - is a round oily fish, found all around the world, especially in the Atlantic and Pacific oceans. Often farmed. Has a pinky red flesh.
Trout - is a round oily freshwater fish, often farmed. Has a delicate pinky red flesh. The video below shows some trout being fished out of their tank ready for preparation.

FLAT FISH
Halibut - is a large flat fish (often 'huge') with a rich meaty flavour. Like Turbot, often large wnough to cut into Troncons.

Plaice - can be identified by the numerous brown spots across its skin. Found all over Europe.
Sole - regarded as a superior taste to Plaice, Sole comes as several different varieties. Look out for Dover Sole and Lemon Sole - what's the difference?

Turbot - a large flat distinctively flavoured food fish with bumpy skin. Large flat fish can be used for Troncons (on-the-bone steaks cut across the fish)
